Before moving to Australia, I had never really had much of an opinion for passion fruit. But there’s ever passion fruit flavoured ice cream here! It’s everywhere. And now we’ve been blessed? with a vine of our own. Never leave a passion fruit vine in the possession of a Texas girl who eats cactus as a delicacy.

Thankfully, Pinterest exists so I searched for recipes using passion fruit. And I came across passion fruit butter? I tasted lemon butter in Bali and it was SO GOOD. Served on toast, it’s like eating a lemon square in its healthiest form.

So I decided to give this passion fruit butter a try, but of course I never follow the actual recipe and always end up making my own. So here you go:

Ingredients:

  • 6 passion fruits
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 large egg
  • 1 large egg yolk
  • 1/2 lemon

Directions:

  1. Melt butter and sugar together in a saucepan on medium heat. Mix until completely melted. Remove from heat.
  2. Best eggs and passion fruit pulp with an electric mixer. Add to melted butter and mix over medium heat stirring consistently so that the mixture doesn’t burn.
  3. Add lemon juice to mixture and continue stirring until it begins to thicken. Note: Butter won’t completely thicken until it’s cooled off.
  4. Let cool before jarring.

    1. Yes for sure! Maybe sometime this week 🤔 I wonder if passion fruit can even grow in Texas 😅 there are a couple of varieties but we have the yellow ones and they kinda taste like guava 😋
