Before moving to Australia, I had never really had much of an opinion for passion fruit. But there’s ever passion fruit flavoured ice cream here! It’s everywhere. And now we’ve been blessed? with a vine of our own. Never leave a passion fruit vine in the possession of a Texas girl who eats cactus as a delicacy.
Thankfully, Pinterest exists so I searched for recipes using passion fruit. And I came across passion fruit butter? I tasted lemon butter in Bali and it was SO GOOD. Served on toast, it’s like eating a lemon square in its healthiest form.
So I decided to give this passion fruit butter a try, but of course I never follow the actual recipe and always end up making my own. So here you go:
- 6 passion fruits
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 large egg
- 1 large egg yolk
- 1/2 lemon
- Melt butter and sugar together in a saucepan on medium heat. Mix until completely melted. Remove from heat.
- Best eggs and passion fruit pulp with an electric mixer. Add to melted butter and mix over medium heat stirring consistently so that the mixture doesn’t burn.
- Add lemon juice to mixture and continue stirring until it begins to thicken. Note: Butter won’t completely thicken until it’s cooled off.
- Let cool before jarring.
